Ingredients
Caramelised Onions
- 8–9 brown onions (about 1.4 kg / 3 lb), thinly sliced
- 2 tablespoons butter (28 g), melted
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ cup water (only if needed)
Soup
- 2 tablespoons butter (28 g)
- 1 tablespoon all-purpose flour
- ½ cup dry white wine
- 7 cups (1.75 litres) good-quality dark beef stock
- 1 beef stock cube
- 1 teaspoon Worcestershire sauce
- 1 teaspoon soy sauce
- 1 bay leaf
- 2 sprigs fresh thyme (or 1 teaspoon dried thyme)
- ¼ teaspoon cracked black pepper
To Finish
- Salt and pepper, to taste

- Toasted baguette slices
