Why the Slow Cooker Is Perfect for Soup
The slow cooker is a permanent part of our kitchen bench year round, but it really does become well used from Autumn. As the days get cooler and we are spending less time rushing around we can use our time to create more recipes.

Using the slow cooker means less time spent cooking but more time for the flavours to develop. And when making soup I think that is super important. There is just something about a slow cooked soup compared to the stove top.

Using Simple Pantry Staples For My Soup
This recipe is incredibly simple. I like to use similar flavour bases for my soup as it means I almost always have the ingredients on hand, which is why you will see me use garlic, onion and chicken stock in most of my soups. Pantry staples, then just swap out the veges!

- Cream (optional)

Adjusting The Ginger To Suit Your Taste
I love the combination of Carrot and Ginger, but you could easily omit the ginger if you are not a fan, or could reduce or increase the levels to taste! We kept this one mild so the whole family can enjoy it.

You can use fresh, minced or ginger powder in this recipe. The fresh and minced will of course give a much stronger flavour than the dry ginger powder, so adjust the quantity you use depending on the variety you have on hand.

Slow Cooker Cooking Time for This Soup
Cooking times will depend on how much time you have before serving, you can cook on HIGH for 4-5 hours or LOW for 7-8, I prefer to cook on low if I have the time and definitely recommend cooking this one on low.

Adding Cream and Freezing Tips
Adding milk or cream to this recipe is a matter of personal preference, some like the creaminess to take the edge off the flavour, some without. As always with most of my soups, if you are going to freeze the soup, don’t add the cream until you are reheating.
This soup freezes really well! We like to freeze it in individual portions to reheat later.

Using A Stick Blender To Blend Soup
I use a stick blender with my soups, it is such an easy tool to have on hand. Some call them immersion blenders, they are reasonably priced and really handy. Simply blend the soup directly in the slow cooker bowl.
They just make it much easier and you can use it with hot liquids unlike a blender or food processor which suggest otherwise. However feel free to use what you have on hand. Just follow manufacturers recommendations and you may need to do it in batches.

Slow Cooker Carrot & Ginger Soup
Slow Cooker Carrot & Ginger Soup is a smooth, warming soup made with carrot, ginger, onion and broth, creating a comforting and flavourful meal with minimal effort.
Ingredients
- 1 tablespoon oil or butter
- 1 small onion, finely diced
- 2 cloves garlic, crushed
- 1 tablespoon fresh ginger, peeled and finely grated (or 1 teaspoon ground ginger)
- ⅛ teaspoon ground cumin
- ½ teaspoon Dijon mustard
- 1 kg carrots, cut into 2–3 cm pieces
- 2 medium Agria potatoes, (or other floury potato) cut into 2–3 cm pieces
- 3½ cups vegetable or chicken stock (875 ml)
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
To finish
- ⅓ cup cream (80 ml)
- 10 g butter
- 1–2 teaspoons lemon juice or apple cider vinegar, to taste
Garnish suggestions
- toasted pumpkin seeds
- a swirl of yoghurt
- a drizzle of olive oil
Instructions
- Heat the oil or butter in a frying pan over medium heat. Add the onion and cook gently until soft and lightly golden.
- Add the garlic, ginger, cumin and Dijon mustard and cook for 30-60 seconds until fragrant. Transfer to the slow cooker.
- Add the carrots, potatoes, stock, salt and pepper to the slow cooker. Stir well.
- Cover and cook on HIGH for 3-4 hours or LOW for 8-9 hours, until the carrots are very tender.
- Blend with a stick blender or heatproof blender until smooth and silky. Stir in the cream and butter until smooth.
- Stir in 1 teaspoon lemon juice or apple cider vinegar. Taste and adjust the seasoning as needed.
- Serve warm with crusty bread or toast. Extra cream or cracked pepper can be added at the table if desired.
- Allow to cool completely, then store in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat gently until piping hot before serving.
Notes
I recommend the use of a stick blender, if you do not have one use your blender or food processor as per manufacturers instructions, not all can handle hot food so take care.

I absolutely love the look of this one. For those without a stick blender, when mine broke I used my potato masher. Took a little bit longer and wasn’t quite as creamy a texture, but I quite like a coarse texture for my soups.
This soup looks so yummy 😋 If I don’t have a slow cooker , I imagine I could just use a pot on a stove top to make it .Maybe I could give it a go and let you know the results.
